Fresh Avocado and Tomato Salad

Hello! I have a great recipe to share with you today. It is so simple to throw together as a snack or appetizer. The avocados in the salad are a source of healthy, monounsaturated fats. They also have tons of different vitamins and fiber! And most importantly, it tastes delicious.

Here is what you’ll need:

  • 1 Avocado
  • 2 Roma Tomatoes (or 1 Medium tomato)
  • 4 ounces fresh Mozzarella cheese
  • 1 Tablespoon Olive Oil
  • 1/2 Teaspoon Basil

To begin, you are going to dice up your avocado, tomatoes, and Mozzarella.


*Tip: If you are cooking with avocados and only use half, keep the pit in the other half,   sprinkle on some lemon juice, and seal tightly with plastic wrap or in an air-tight container. The goal here is to prevent oxidation, which results in the browning coloring.


When you have everything diced up, combine it in a bowl, drizzle with olive oil, and toss to coat evenly. Finally, add the basil and toss again to cover all of the salad.


Serve immediately and enjoy!
